What do I need to make my Lychee Mocktail?

Lychee: is the star of this mocktail because of its distinct sweetness and floral aroma. To ensure consistent sweetness and rich flavor, it’s best to use lychee in syrup. We recommend the AROY-D brand for its quality and taste. However, we do not recommend Coles tinned lychee due to its inconsistency.

Lime: adds a necessary acidity to balance the sweetness of the lychee and cranberry juice. It enhances the overall flavor profile, making the drink more refreshing and vibrant. 

Ginger: provides a subtle warmth and spice, adding depth to the mocktail. Its slightly spicy flavor complements the sweetness of the lychee and the tartness of the cranberry juice. 

Sugar: Adding sugar can make the lychee sweeter and balance the tartness of the cranberry juice. Sugar enhances the flavor by bringing out the natural sweetness of the lychee and complements the other ingredients. If you prefer a less sweet drink, you can use less sugar or skip it altogether.

Cranberry Juice: adds a beautiful color and a tart flavor that contrasts nicely with the sweetness of the lychee. It also adds a refreshing quality to the drink, making it perfect for hot weather.

How do I make my Lychee Mocktail?

  1. To a blender, add tinned lychee, lime, ginger & sugar, blitz till very smooth. Pour through a sieve and remove pulp. 
  2. To a glass, add ice, preferred quantity of cranberry juice and lychee juice blend. 

Can I use fresh lychees instead of tinned lychees?

I like to use canned lychees in syrup for this recipe. Canned lychees provide consistent sweetness and flavor, while fresh lychees can vary in sweetness. They also require peeling and deseeding, which can take time. Additionally, fresh lychees have a shorter shelf life and may not always be available in your local market. On the other hand, canned lychees are readily available and convenient to use. The syrup in the can ensures that the lychees are sweet and juicy, making them perfect for this mocktail. If you decide to use fresh lychees, you may need to prepare a simple sugar syrup to mimic the sweetness of the canned version.

What can I use as a substitute for cranberry juice?

  • 1 wedge lime
  • 2 cm piece of ginger
  • 1 tbsp sugar
  • 200 mL cranberry juice
